NIBBLES: Spicy Pigs in Blankets

Who doesn’t love Christmas dinner? Well, this year we are offering you the chance to have not one but two, by holding a Christmas feast during December in support of ActionAid. Whether you host a 'Faux Christmas' with friends, make some winter warmers for your local community group, or hold a Christmas cake off at the office, the money you raise will help ActionAid keep homeless children safe this Christmas.

To get you started, we've gathered together our favourite Christmas recipes to help you cook up a Christmas feast to remember.

Ingredients

  • 1 tsp of each spice: ground cinnamon, ginger and nutmeg
  • ½ tsp ground allspice
  • 32 cocktail sausages or chipolatas
  • 16 x rashers smoked streaky bacon
  • spiced honey dressing
  • 4 tbsp runny honey
  • 2 tbsp booze, (kirsch, brandy, rum or whisky) or orange juice for a non-alcoholic version
  • 1-2 tsp Tabasco

Directions

  1. Mix the spices together and lightly dust the sausages with the spice mix.
  2. Using the back of a knife or a pair of scissors, carefully stretch each bacon rasher out and cut each rasher in half.
  3. Roll them around each sausage and place them on a non-stick baking tray.
  4. Gently warm the honey in a small saucepan, before adding the booze and Tabasco. Stir well to combine, and then pour over the pigs in blankets. Make sure that they are well coated all over.
  5. Bake for about 35 to 40 minutes at 180C, basting occasionally and turning once until lightly browned.
