MAIN: Chicken with Boursin and Pancetta

Try this delicious way of serving chicken breasts. It’s easy to make and is perfect for warmer weather as it is quite a light dish.


Serves 8

  • 8 chicken breasts
  • 400g boursin
  • 8-16 slices pancetta or streaky bacon


  • 600ml double cream
  • 4 tablespoons whole grain mustard
  • 1 glass white wine or to taste – optional


Start preparing about 1 hour before serving. You’ll need an ovenproof dish to bake the chicken, with either a lid or tin foil to cover so that the meat doesn’t dry out.

1. Preheat the oven to 180 ̊C / gas mark 4.

2. Flatten the chicken a little with a rolling pin or meat hammer.

3. Put about 1 dessertspoon full of the boursin on each chicken breast – don’t worry about spreading it – then roll each chicken breast up and wrap in a slice of pancetta.

4. Bake in the over for about 30-40 minutes until the chicken is tender and cooked through.

5. To serve pour the sauce over the chicken, or if you prefer, serve the sauce separately in a jug.


In a jug or small pan, mix the cream and wholegrain mustard together and heat gently, either in the microwave, or on the hob. Add a splash of white wine to taste.

Serve with...

Baby new potatoes and any combination of green beans, mange tout, courgettes, broccoli and/or green salad.
