MAIN: Asha's Shahi Paneer

If you are vegetarian, or just fancy a change from your usual curry recipe, then try this delicious recipe recommended by Indian friends in Delhi. It is surprisingly easy to make and goes really well with basmati rice, naan or chapatti to soak up the gorgeous sauce!


  • 400g paneer (Indian cheese)
  • 2 tablespoons oil (sunflower or groundnut)
  • 2 medium onions, finely chopped
  • 15-20 cashew nuts
  • 5 medium tomatoes, finely chopped
  • 1 teaspoon chilli powder
  • Pinch turmeric
  • 1 tablespoon ground coriander
  • Salt to taste
  • 25g butter
  • ½ cup cream + some for garnishing
  • 1 teaspoon dried fenugreek leaves
  • 1 teaspoon garam masala 


  1. Heat oil in a saute pan or medium sized saucepan. Add onions and cashew nuts and sauté lightly. Add tomatoes and cook for 10-12mins or until tomatoes are pulpy.
  2. Add chilli powder, coriander, turmeric and salt. Stir well.
  3. Transfer mixture to a blender and blend to a paste with a little water.
  4. Put mixture back in pan. Add butter, cover and cook on a low heat for 10mins.
  5. Add cream and stir. Add paneer, fenugreek leaves, garam masala and mix well until warmed through. Transfer to serving dish and garnish with cream. Serve piping hot.
