DESSERT: Fruity Oaty Loveliness

This is a very simple and versatile pudding that you can vary either by using seasonal fruits or by choosing fruits that compliment the main course.

We suggest serving it with cream, but you could use icecream or even custard for a warming winter pud.

Serves 8

Fruity Part

  • 600g stewed fruit: apples, blackberries, pears, plums, apricots... if you prefer more fruit than crumble then just add extra!

Oaty topping

  • 85g butter
  • 85g Demerara OR muscovado sugar
  • 115g oats (jumbo oats give are a good option as they give more texture)
  • 240ml double cream 240ml single cream
  • 55g grated plain chocolate or walnuts, pecans, toasted almonds

1. Melt the butter in a pan and add the sugar. When melted stir in the oats until they are well coated.

2. Place half the oat mixture in a dish, cover with the fruit and top with the remainder of oats.

3. Whip the cream and spoon over oats mixture leaving about 2cm uncovered round the edge.

4. Sprinkle with chocolate... or walnuts... or toasted almonds...
