Time to cook: 15 minutes plus chilling

STARTER: Flaggon Cheese

This is simple and tasty, you can make it in advance and store in the fridge until you need it...

It's quite rich, so doesn't need to served in big portions and can stretch to 6 people. A nice alternative is to serve some of the flaggon cheese on a slice of crispbread with a sundried tomato on top.


Serves 4

  • 100g mature cheddar cheese, grated
  • 50g softened butter
  • 25g cream cheese
  • 2 tablespoons sherry
  • Seasoning
  • Fresh parsley to garnish


  1. You’ll need a bowl for mixing and 4 ramekins or similar sized pots for serving the cheese - they don’t need to be oven or heat proof.
  2. Mix the grated cheddar, cream cheese and butter in a bowl and pound until smooth. The back of a wooden spoon is good for this.
  3. Blend in the sherry and season to taste.
  4. Divide between the ramekins and store in the fridge until you’re ready to serve.

Serve with...

Crusty bread or crackers.
